Mexican Bean Soup

ingredients

2lbs dry pinto beans

1 lrg. can tomatoes

med. onion

1lb hamburger(opt.)

1 jar salsa(spicy or mild to taste)

salt

directions

Soak dry beans overnight. In the morning put beans in a crockpot with

enough water to cover about 2 or 3 inches. Do not add salt yet, it

will lengthen cooking time. When beans are tender, add tomatoes,

diced onion, browned hamburger, salsa, and salt to taste. Allow to

simmer at least 30 minutes to blend flavors(you may turn to low now if

you wish).

This is easy to prepare with very little "fussing". It's delicous

served with homemade bread, breadsticks, or cornbread. It also

freezes well, for a quick out of the freezer meal.

Chicken with Lime and Ginger

 

4 to 6 chicken thighs or legs, skin removed

* cup Soy sauce

3 tbsp Each: vegetable oil, honey

2 Limes, juice and grated rind

2 Garlic cloves, minced

1 Piece (1-inch/2.5 cm) gingerroot

* tsp Dried mint

Combine all ingredients, except chicken in a large freezer bag or bowl. Add chicken and turn to coat well. Marinate in the refrigerator 2 to 4 hours. Pour chicken

and marinade into a medium baking dish. Bake in 350°F (180°C) oven 50 to 60 minutes or until juices run clear.

Serves 4

 

 

Black Bean Chili Burritos

 

 

Chili:

1 T olive oil

1/2 lb lean ground turkey breast

1/2 cup diced yellow onions

1 t minced garlic

14 t whole cumin seed, bruised

1 T leaf oregano

3/4 cup crushed tomatoes (canned)

1 T chipotle peppers in adobo, minced

2 cup canned black beans, drained

 

Heat oil in a nonstick skillet. Over a medium flame, brown turkey, breaking it into small chunks with a wooden spoon. When almost cooked through, add onions and garlic. Cook mixture until onions are transparent. Add cumin seeds and oregano, and stir well. Add remainig ingredients, bring to a boil, and reduce heat to a simmer. Cook slowly for 10-12 minutes.

 

Burritos:

Scoop 3/4 cup of the chili onto a 10-inch flour tortilla, and spread it along one diameter, leaving about an inch and a half of space between the chili and the edge of the tortilla. Add 1 ounce of plain yogurt and 1 and 1/2 ounce of grated cheddar cheese, and roll up.

Sauteed Turkey in Creamy Mushroom Sauce

 

1 lb. White turkey breast chops or cubed thigh meat

2 tbsp. margarine

8 oz. package mushrooms, sliced

1/2 cup onion, diced

1 can cream of mushroom soup

1/2 cup milk

1/2 tsp. garlic salt

1 tsp. Worcestershire sauce

2 tbsp. cooking sherry (optional)

 

Melt margarine in large skillet over medium-high heat. Sprinkle garlic salt and a pinch of pepper on the meat. Quickly cook turkey, approximately 1 1/2 minutes per side. Remove from skillet. Add mushrooms and onions to skillet and sauté until tender, stirring often. Add remaining ingredients, stirring to combine. Bring to a simmer. Return turkey to skillet. Heat just until hot. Serve over rice and sprinkle with parsley.

 

 

 

Tuscan Pizza

 

8 oz. fresh ground White turkey

1/2 cup mushrooms, sliced

1/2 tsp. garlic salt

1/2 cup onion, sliced

1/2 medium green bell pepper, cut into thin strips

1 prepared 12" pizza crust

3/4 cup pizza sauce

3/4 tsp. Italian seasoning

1 1/2 cup mozzarella cheese, shredded (6 oz.)

 

In skillet, cook turkey, breaking up any large chunks, and sprinkling with garlic salt. Add mushrooms, onion, and green peppers. Cook for 2-3 minutes, just until vegetables are slightly softened. Spread pizza crust with sauce, top with turkey and vegetable mixture. Sprinkle with Italian seasoning. Spread cheese over top. Bake in pre-heated 450 degrees oven for 5-8 minutes or until hot.

 

 

 

Grilled Turkey and Broccoli Milano

 

1 lb. White turkey chops or thigh meat

1/3 cup Italian salad dressing, bottled

1 1/2 cups Alfredo sauce

2 cups broccoli florets, cooked and drained

3/4 tsp. Italian seasoning

1 lb. linguini, cooked

Parmesan cheese as needed

 

Combine turkey and dressing in plastic bag; shake to coat turkey. Marinate for 10 minutes. Grill or broil turkey for approximately 2-3 minutes per side. Remove from heat. While turkey is cooking, heat Alfredo sauce, broccoli, and Italian seasoning together, until mixture simmers. Ladle sauce and broccoli over linguini. Shingle turkey over linguini. Sprinkle with parmesan cheese.

 

Turkey Marinara

 

1 lb. fresh ground White turkey

1/2 cup onion, chopped

1 cup zucchini, sliced

1 cup mushrooms, sliced

2 tsp. basil, dried

1 (28 oz.) jar spaghetti sauce

1 lb. spaghetti, cooked

1/2 cup mozzarella cheese, shredded

 

In skillet, cook turkey over medium heat until no pink remains, breaking up any large chunks. Add onion, zucchini, mushrooms and basil. Cook, stirring frequently until vegetables are tender. Add spaghetti sauce, stirring to combine, and heat sauce. Ladle hot sauce over spaghetti. Sprinkle with mozzarella cheese.

 

 

 

 

 

Cashew Turkey Stir-Fry

 

3/4 lb. boneless White turkey breast cubed or Honeysuckle White turkey thigh meat cut into strips

2 tbsp. oil

1 lb. stir-fry vegetables (in produce section)

1 cup bean sprouts

1 can water chestnuts, sliced

1/2 cup stir-fry sauce, bottled

1/3 cup cashews

4 cups rice, cooked

 

In large skillet or wok, heat oil and toss turkey to cook. Add vegetables, sprouts, and water chestnuts. Cook till tender-crisp. Add sauce and cashews. Stir to coat and heat sauce. Serve over rice.

 

 

 

 

 

French Onion Turkey Burger

 

1 1/4 lbs. fresh ground White turkey

1 package onion soup mix

1 tbsp. oil

1 medium onion, thinly sliced

4 slices Swiss cheese

Parmesan cheese as needed

 

Combine turkey and onion soup mix. Shape into four patties. Grill or broil. While patties are cooking, sauté onions in skillet with oil until tender. Before removing patties from grill, top with onions and slice of Swiss cheese. Allow to melt slightly. Sprinkle Parmesan cheese over top.

8 oz. fresh ground Honeysuckle White turkey

1/2 cup mushrooms, sliced

1/2 cup onion, sliced

1/2 cup broccoli florets

1 prepared 12" pizza crust

3/4 cup Alfredo sauce

3/4 tsp. Italian seasoning

1 1/2 cup mozzarella cheese, shredded (6 oz.)

1/2 tsp. garlic salt

In skillet, cook turkey, breaking up any large chunks and sprinkling with garlic salt. Add mushrooms, onions, and broccoli. Cook for 2-3 minutes just until vegetables are slightly softened. Turkey Tortilla Roll-ups

serves=however many you want
ingredients=sliced turkey
sliced cheese [any flavor]
jellied cranberry sauce
mayonaise
lettuce
tomato
anything else you might want on a sandwich
directions=Mix a little mayo and cranberry sauce together [it will be pink , you mix to taste]
Spread on tortilla, add sliced turkey, chesse and any other ingredients you want.
Then you roll like a jelly roll. It's very good , fast and easy.

My kids love this recipe. It can be a fast dinner or an afternoon snack.
